Why Cold Weather Is a Good Thing for Garlic (And Why We’re Cheering for Cold Temperatures!)

When winter temperatures drop and everyone starts reaching for their warmest coats, we have a little secret to share…
We’re actually cheering for the cold snap! ❄️🧄


That’s because garlic  - especially elephant garlic - needs a cold period in order to grow properly and form those big, beautiful cloves you love. Garlic bulbs will not form cloves if it doesn't get cold enough.




Why Does Garlic Need Cold Weather? 🌱


Garlic goes through a natural process called vernalization, which is the process where plants require cold temperatures to trigger proper bulb development.


Without enough cold exposure:


  • Garlic may grow tall green shoots

  • But it won’t properly divide into cloves

  • Bulbs can stay small, round, or undeveloped

  • The final harvest won’t be nearly as flavorful or impressive



So when winter brings those chilly nights, it’s actually doing something wonderful underground ✨🌱

While it may look like nothing is happening in the fields, our elephant garlic is quietly hard at work.


During winter:

  • Roots continue to develop

  • The plant stores energy for spring growth

  • Cold temperatures signal the bulb to begin forming cloves

  • The foundation is laid for a strong, healthy harvest




That means every frosty morning and snowy evening is helping to build the garlic you’ll enjoy later this year!
