As spring settles in and the days grow warmer, something beautiful is happening out in the fields…

Our elephant garlic is thriving! 💚

What started as quiet underground growth through the winter has now transformed into tall green shoots stretching toward the sunshine. Every week brings noticeable changes, and this time of year is one of the most exciting seasons on the farm.

There’s something incredibly rewarding about watching the fields wake up after months of patience, preparation, and care.

What’s Happening in the Garlic Fields Right Now?

May is a season of steady growth.

Out in the fields, you’ll begin to notice:

🌱 Taller, brighter green leaves

🌱 Strong upward growth

🌱 Healthier root systems developing underground

🌱 The fields filling with vibrant spring color

🌱 Garlic plants soaking up longer days and sunshine

Even though much of the magic is still happening beneath the soil, every stage matters. Right now, the plants are focused on building strength for the months ahead.

Why This Stage Is So Important

This part of the growing season helps determine the size and quality of the bulbs later on.

Healthy spring growth means the garlic is storing energy, developing strong roots, and preparing for the beautiful harvest to come this summer.

Good garlic takes time — and nature never rushes. That’s part of what makes locally grown food feel so special.
